    柠檬风味料在肉制品中的应用

    摘要:以天然柠檬精油为基础风味料,以鸡肉、牛肉和猪肉(羊肉)为主要原料,介绍柠檬鸡排、柠檬黑椒牛排、柠檬调理肉片的制备方法。该产品的测试数据表明,84%受测者对该产品有购买意愿,对产品的口感和风味评价较高;结合牛排的口感和出品率要求,优化了牛排的工艺和配方,以猪肉片为例,对该类产品的的制备方法进行了优化实验。文中3种产品的应用实例,涵盖了市场上比较常见的调理肉制品产品类别和加工方式,有一定的代表意义。

    Abstract:Natural lemon essential oil was taken as basic fl***or material, and chicken, beef and pork (mutton) were taken as main raw materials, and the preparation method of lemon chicken steak was introduced. The test data of the product indicated that 84% of the test subjects had the intention to purchase the product, and the evaluation of taste and fl***or of products was high. combined with the taste and yield requirements of steak, the technology and formula of steak were optimized. Pork slices was taken as an example, the preparation method of this kind of product was conducted to optimized experiment. Application examples including three kinds of products covered common product types and processing methods of conditioning meat products in the market, and they had a certain representative significance.
